I love a good reason to throw a party, especially in the summer and in a naturally pretty setting. So We thought let’s host our friends and neighbors for a fun night of cocktails and bites in our pretty courtyard!
I had ALL the plans for this night. It turned out great, but IT WAS HOT! SO HOT. This was the week in Nashville where it was 100 degrees and 100% humidity. I know, i’m a baby. Some of you live where it’s even hotter and I can not imagine. This has been a hot summer for sure, but a great one!
This fun night was pretty easy when it came to decor because we have a gorgeous courtyard in our apartment complex. I just added a few things to add just an extra special touch. I used flowers and my all time fave go to- eucalyptus. Why does that make everything just so dreamy?! I also used candles, and lanterns for a warm glowing touch for when it got dark and dim outside. You have to set the mood right!? I just used fun placemats to go under the candles on all of the tables.
One thing we purchased that I wasn’t sure about, was our inflatable ice trays. (click to buy yours!)I saw these on Pinterest at a lot of people’s picnics, and thought why not give it a try. I knew it could either be awesome, or really trashy! But it turned out awesome! I got 2 for $15 and it was a great purchase because they can be used for many different things! I knew this would keep my food cold on a hot summer night.
We had fun summery finger food, and of course tasty cocktails. We had Cucumber bites, minted watermelon, summer pasta salad, and grapefruit mules. (recipes below!) The ice kept them all nice and cool, and it was easy and inexpensive to prepare.
Whatever kind of party you have, just be sure to have fun! Use what you have and just put a new spin on it! Entertaining doesn’t have to be expensive or stressful! Be you:)
- 1 french Baguette
- 1 block creme cheese
- 1 small block goat cheese
- 1 Tablespoon oregano
- 1 healthy pinch sea salt + pepper
- 1 cucumber
- cut baguette in slices. Soften cheeses for 20 min before using. Mix all ingredients together and spread over bread. Then place sliced cucumber on each piece. Top with light sprinkle of salt and pepper.
- 1 watermelon
- 1/2 cup sugar
- 2 tbsp sea salt
- fresh mint
- cut watermelon in triangles. Place all ingredients in food processor and blend, then sprinkle over watermelon. Add more or less of salt and sugar-to taste.
Summer Pasta Salad
- 1 box of choice pasta
- 1 red pepper
- 1 green pepper
- 1 orange pepper
- 1 block of sharp cheddar
- 2-4 ears of uncooked fresh corn and cut off cob.(or cooked, but cooled)
- cauliflower florets
- 1 diced cucumber
- 3/4 bottle of Light Italian dressing
- top with parmesan cheese
